Description

Indulge in delicious S’mores Pancakes, a perfect treat for dessert lovers.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for the pan)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 cup mini marshmallows
  • 1/4 cup chocolate syrup or melted chocolate
  • 2 graham crackers, crushed
  • Whipped cream (optional)
  • Toasted marshmallows (optional but highly recommended)

Instructions

  1. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry and stir until just combined. Fold in chocolate chips if using.
  4. Heat a nonstick skillet or griddle over medium heat and add a little butter.
  5. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until both sides are set and fluffy. Repeat with remaining batter.
  6. Stack pancakes on a plate and layer with mini marshmallows between each one if desired (they’ll melt slightly—yum!).
  7. Drizzle chocolate syrup over the stack, sprinkle with crushed graham crackers, and top with extra marshmallows, whipped cream, or even a toasted marshmallow on top.

Notes

  • For an extra chocolate flavor, add more chocolate chips or drizzle more chocolate syrup.
  • Make sure to use fresh marshmallows for the best melting effect.
  • These pancakes can be made ahead and reheated in the toaster for a quick breakfast.
