Description

Sour Rainbow Punch Vodka Rollups are a fun and colorful party treat made with fruit-flavored gelatin and sour candy.


Ingredients

  • 1 cup sour rainbow candy strips
  • 1 cup vodka
  • 2 cups fruit-flavored gelatin (such as cherry, lemon, lime, and blue raspberry)
  • 2 cups water
  • 1/2 cup granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup sour sugar (optional, for coating)

Instructions

  1. Begin by gathering all your ingredients and ensuring you have a clean and organized workspace.
  2. In a medium saucepan, bring 2 cups of water to a boil over medium heat.
  3. Once the water is boiling, remove it from the heat and add in the fruit-flavored gelatin. Stir continuously until the gelatin is completely dissolved.
  4. Next, add in the granulated sugar and corn syrup to the mixture. Stir until both are fully dissolved and incorporated.
  5. Allow the gelatin mixture to cool for a few minutes until it’s warm but not hot.
  6. Carefully mix in 1 cup of vodka to the gelatin mixture, stirring well to ensure it is evenly distributed.
  7. Take a baking dish or a shallow pan and lightly grease it to prevent sticking. THIS PART IS IMPORTANT!
  8. Pour the vodka-gelatin mixture into the prepared baking dish, ensuring an even layer.
  9. Place the dish in the refrigerator and let it chill for about 4 to 6 hours, or until the mixture has fully set.
  10. Once the gelatin has set, remove it from the refrigerator.
  11. Carefully run a knife around the edges of the dish to loosen the gelatin.
  12. Turn the dish upside down onto a clean cutting board and gently tap it to release the gelatin.
  13. Using a sharp knife, cut the gelatin into strips about 1 inch wide.
  14. Take the sour rainbow candy strips and cut them into similar lengths as the gelatin strips.
  15. To assemble the rollups, place a piece of the sour candy strip on top of a gelatin strip and roll it up tightly, starting from one end.
  16. Repeat the rolling process until all the gelatin strips are paired with the sour candy.
  17. If desired, roll the finished rollups in sour sugar for an extra kick.
  18. Place the completed Sour Rainbow Punch Vodka Rollups on a plate and keep them refrigerated until you’re ready to serve.
