- 1 cup cottage cheese (low-fat or full-fat)

- 4 slices whole grain or gluten-free bread
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel and slice sweet potatoes into thin rounds (about ¼ inch thick).
- Toss sweet potato slices with olive oil, cinnamon, and paprika until evenly coated.
- Spread slices on the baking sheet in a single layer and roast for 20-25 minutes until tender and slightly crispy.
- While the sweet potatoes roast, toast the bread until golden brown.
- Spread cottage cheese generously on each slice of toast and top with roasted sweet potato slices.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potato mixture.
- Feel free to use any type of bread you prefer.
