Description
Flaky, savory puff pastry rolls filled with creamy feta, sautéed spinach, and a hint of garlic. Perfect for brunch, parties, or snacks.
Ingredients
For the Filling
300 g fresh spinach (or 200 g frozen, thawed and drained)
200 g feta cheese, crumbled
1 egg
1 garlic clove, finely grated
½ tsp dried oregano
Black pepper, to taste
For the Pastry
1 sheet puff pastry (250–275 g), thawed if frozen
1 egg yolk + 1 tbsp milk (for egg wash)
Optional: sesame seeds or nigella seeds for topping
Instructions
1. Sauté spinach in a dry pan until wilted. Let cool, chop finely, and combine with crumbled feta, egg, garlic, oregano, and pepper.
2. Roll out puff pastry on a floured surface into a large rectangle. Spread filling evenly over half and fold the other half on top.
3. Cut into 3–4 cm wide strips. Twist each strip or roll into logs.
4. Place rolls on parchment-lined baking sheet. Brush with egg wash and sprinkle seeds if desired.
5. Bake at 200°C (390°F) for 20–25 minutes, until golden and puffed. Serve warm or at room temperature.
Notes
Make-ahead tip: Freeze unbaked rolls and bake directly from frozen—add 5–7 minutes to baking time.
Serve with tzatziki or herbed yogurt dip for extra flavor.
Reheat leftovers in the oven to restore crispiness. Avoid microwaving.
