Description

A refreshing and vibrant fruit salad perfect for celebrating St. Patrick’s Day with a delightful mix of green fruits.


Ingredients

  • 1 cup green grapes, halved
  • 2 kiwis, peeled and sliced
  • 1 green apple, diced (Granny Smith or Honeycrisp)
  • 1 cup honeydew melon, cubed
  • 1 cup pineapple chunks
  • 1/2 cup sliced cucumber
  • 1/2 cup avocado, diced (optional)
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons honey or maple syrup
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 teaspoon lime zest
  • 1 teaspoon poppy seeds (optional)

Instructions

  1. Wash and slice all fruit into bite-sized pieces. If using an apple, toss the slices with a little lime juice to prevent browning.
  2. In a small bowl, whisk together the honey, lime juice, and lime zest. Stir in poppy seeds if using.
  3. In a large bowl, combine all the prepped fruit and fresh mint. Drizzle the honey-lime dressing over the fruit and gently toss to coat.
  4. Let the salad sit for 10-15 minutes in the fridge to allow flavors to meld. Serve chilled and enjoy!
