Ingredients

- 1 cup green grapes, halved
- 2 kiwis, peeled and sliced
- 1 green apple, diced (Granny Smith or Honeycrisp)
- 1 cup honeydew melon, cubed
- 1 cup pineapple chunks
- 1/2 cup sliced cucumber
- 1/2 cup avocado, diced (optional)
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons honey or maple syrup
- Juice of 1 lime (about 2 tablespoons)
- 1/2 teaspoon lime zest
- 1 teaspoon poppy seeds (optional)
Instructions
- Wash and slice all fruit into bite-sized pieces. If using an apple, toss the slices with a little lime juice to prevent browning.
- In a small bowl, whisk together the honey, lime juice, and lime zest. Stir in poppy seeds if using.
- In a large bowl, combine all the prepped fruit and fresh mint. Drizzle the honey-lime dressing over the fruit and gently toss to coat.
- Let the salad sit for 10-15 minutes in the fridge to allow flavors to meld. Serve chilled and enjoy!
