A refreshing and hearty steak pasta salad perfect for summer gatherings.


Ingredients

  • 2 steaks (ribeye or sirloin)
  • 8 oz pasta (your choice of shape)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or a grill pan to medium-high heat.
  2. Season the steaks with salt, pepper, and a drizzle of olive oil. Grill for 4-5 minutes on each side for medium-rare, or longer depending on your preferred level of doneness.
  3. While the steaks are grilling, cook the pasta according to package instructions. Drain and set aside.
  4. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and fresh parsley.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic powder, salt, and pepper.
  6. Slice the grilled steaks thinly against the grain and add them to the salad.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Top with crumbled feta cheese and serve immediately.

Notes

  • For a spicier kick, add some red pepper flakes to the dressing.
  • This salad can be made ahead of time; just add the dressing right before serving.
  • Feel free to substitute the feta cheese with goat cheese for a different flavor.
