A refreshing and hearty steak pasta salad perfect for summer gatherings.

- 2 steaks (ribeye or sirloin)
- 8 oz pasta (your choice of shape)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the grill or a grill pan to medium-high heat.
- Season the steaks with salt, pepper, and a drizzle of olive oil. Grill for 4-5 minutes on each side for medium-rare, or longer depending on your preferred level of doneness.
- While the steaks are grilling, cook the pasta according to package instructions. Drain and set aside.
- In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and fresh parsley.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic powder, salt, and pepper.
- Slice the grilled steaks thinly against the grain and add them to the salad.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with crumbled feta cheese and serve immediately.
Notes
- For a spicier kick, add some red pepper flakes to the dressing.
- This salad can be made ahead of time; just add the dressing right before serving.
- Feel free to substitute the feta cheese with goat cheese for a different flavor.
