  • 1 cup cooked ham, diced
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat. Add chopped onions and cook until soft and translucent, about 5 minutes.
  2. Incorporate diced ham into the pot and cook alongside onions for 2 to 3 minutes to blend flavors.
  3. Add quartered potatoes to the pot. Sprinkle garlic powder, paprika, salt, and pepper evenly, stirring to coat all ingredients.
  4. Pour in chicken broth, ensuring potatoes are submerged. If necessary, add water to cover. Raise heat to high and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 to 25 minutes or until potatoes are fork-tender.
  6. Taste and adjust salt and pepper as needed. For thicker broth, gently mash a few potatoes in the pot. Serve hot garnished with chopped parsley.
