Description

Delicious Strawberry Crumble Buttery Bars with a buttery crust and a sweet strawberry filling, perfect for dessert.


Ingredients

Scale
  • 375 g all-purpose flour
  • 300 g granulated sugar
  • 1 teaspoon salt
  • Zest of 1 large lemon
  • 115 g unsalted butter, very cold and cut into small cubes
  • 3 large eggs, slightly beaten
  • 900 g fresh strawberries, washed and sliced
  • Juice of 1 large lemon
  • 1 tablespoon cornstarch
  • 150 g granulated sugar

Instructions

  1. Preheat oven to 175°C. Line a 23×33 cm baking dish with parchment paper, allowing paper to hang over the edges for easy removal.
  2. In a large mixing bowl, blend flour, sugar, salt, and lemon zest. Add cold butter and use a pastry cutter or fingertips to incorporate until the mixture resembles pea-sized crumbs.
  3. Mix in the eggs using a hand mixer or wooden spoon until the dough is crumbly but cohesive. Press together with hands if necessary until the mixture holds shape.
  4. Press two-thirds of the dough evenly into the bottom of the prepared baking dish.
  5. In a separate bowl, toss sliced strawberries with lemon juice, cornstarch, and sugar until evenly coated.
  6. Spread the strawberry filling evenly over the crust using a rubber spatula. Crumble the remaining dough over the top of the fruit layer.
  7. Bake in the preheated oven for 45–50 minutes, or until the top is lightly golden. Remove from oven and allow to cool completely in the pan.
  8. Lift cooled bars from the pan using the parchment paper overhang. Slice into desired portions and serve.

Notes

  • For best results, use fresh strawberries that are ripe and sweet.
  • You can substitute other berries if desired.
  • Store any leftovers in an airtight container in the refrigerator.
