A decadent dessert that combines creamy cheesecake with a crunchy strawberry topping, perfect for any occasion.


Ingredients

    2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • Cheesecake Filling
    24 ounces full-fat cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1/4 cup sour cream
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/4 cups heavy whipping cream
  • Strawberry Sauce
    1 1/2 cups strawberries
  • 1/4 cup granulated sugar
  • 1 tablespoon freshly squeezed lemon juice
  • Strawberry Crunch
    23 golden Oreo cookies
  • 3 ounces strawberry Jell-O
  • 4 tablespoons unsalted butter, melted
  • Garnish
    1 cup heavy whipping cream
  • Fresh strawberries

Instructions

  1. Line the bottom and sides of a springform pan with parchment paper. In a medium-sized bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom and sides of the prepared pan. Chill while preparing the filling.
  2. In a large bowl, beat cream cheese and powdered sugar on medium speed until smooth. Add sour cream, lemon juice, and vanilla extract. Beat until combined. In a separate bowl, beat whipping cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture. Spread the filling over the crust, smooth the top, and refrigerate for 6 hours or overnight.
  3. In a medium saucepan, combine strawberries, sugar, and lemon juice. Heat over medium heat until boiling, stirring occasionally. Once thickened and strawberries are soft, mash with a potato masher or blend for a smoother texture. Optionally, strain through a sieve. Cool and store in the fridge.
  4. Crush Oreo cookies and mix with strawberry Jell-O powder and melted butter until combined. Set aside for topping.
  5. Spread the strawberry sauce over the chilled cheesecake. Generously sprinkle with strawberry crunch topping. Decorate with whipped topping and fresh strawberries. Serve chilled.
