2 cups graham cracker crumbs - 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Cheesecake Filling
24 ounces full-fat cream cheese, softened to room temperature - 1 cup powdered sugar
- 1/4 cup sour cream
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon vanilla extract
- 1 1/4 cups heavy whipping cream
- Strawberry Sauce
1 1/2 cups strawberries - 1/4 cup granulated sugar
- 1 tablespoon freshly squeezed lemon juice
- Strawberry Crunch
23 golden Oreo cookies - 3 ounces strawberry Jell-O
- 4 tablespoons unsalted butter, melted
- Garnish
1 cup heavy whipping cream - Fresh strawberries
Instructions
- Line the bottom and sides of a springform pan with parchment paper. In a medium-sized bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom and sides of the prepared pan. Chill while preparing the filling.
- In a large bowl, beat cream cheese and powdered sugar on medium speed until smooth. Add sour cream, lemon juice, and vanilla extract. Beat until combined. In a separate bowl, beat whipping cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture. Spread the filling over the crust, smooth the top, and refrigerate for 6 hours or overnight.
- In a medium saucepan, combine strawberries, sugar, and lemon juice. Heat over medium heat until boiling, stirring occasionally. Once thickened and strawberries are soft, mash with a potato masher or blend for a smoother texture. Optionally, strain through a sieve. Cool and store in the fridge.
- Crush Oreo cookies and mix with strawberry Jell-O powder and melted butter until combined. Set aside for topping.
- Spread the strawberry sauce over the chilled cheesecake. Generously sprinkle with strawberry crunch topping. Decorate with whipped topping and fresh strawberries. Serve chilled.
Notes
- Make sure all ingredients are at room temperature before starting.
- The cheesecake can be made a day in advance for best results.
- Feel free to adjust the sweetness of the strawberry sauce to taste.
- Fresh strawberries can be replaced with other berries if desired.
