Description

A delightful Strawberry Poke Cake that is moist and infused with strawberry flavor, perfect for any occasion.


Ingredients

Scale
  • 15.25 ounces white cake mix or cake mix flavor of your choosing
  • 3 large eggs room temperature
  • 2 ½ cups heavy cream divided
  • ⅓ cup vegetable oil or canola oil
  • 3 ounces strawberry flavored gelatin
  • 1 cup boiling water
  • 8 ounces frozen whipped topping thawed (or use homemade whipped cream if enjoying right away)
  • 20 vanilla sandwich cookies
  • 2 ½ tablespoons strawberry syrup
  • Fresh strawberries (optional garnish)

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9×13 inch baking dish or cake pan with nonstick cooking spray.
  2. In a large mixing bowl, beat together the cake mix, eggs, 1 ½ cups heavy cream and oil with a hand or stand mixer just until smooth and combined.
  3. Evenly spread the cake batter into the prepared pan and bake for 30 to 35 minutes or until an inserted toothpick comes out of the middle with just a few crumbs.
  4. Remove the cake from the oven and let cool in the pan for 20 to 30 minutes.
  5. Use the bottom of a wooden spoon to poke holes all over the top being careful to poke about two-thirds of the way through the cake.
  6. In a medium-size, heat proof bowl, whisk together the strawberry gelatin powder and boiling water until dissolved, about 2 to 3 minutes.
  7. Slowly whisk in the remaining cup of heavy cream until fully combined.
  8. Gently pour the jello mixture over the cake, filling the holes as much as possible and spreading any leftover on top.
  9. Cover and refrigerate for 4 hours, or overnight.
  10. Uncover and spread the whipped topping evenly over the top of the cake.
  11. Pulse the vanilla cookies in a food processor until crumbled, then drizzle the strawberry syrup over and pulse again until combined.
  12. Evenly sprinkle the strawberry crunch topping over the whipped topping. Serve and enjoy!

Notes

  • Do not over bake the cake to ensure it remains moist.
  • For the best flavor, refrigerate the cake overnight.
  • Fresh strawberries make a great garnish.
