Description

Delicious stuffed sweet potatoes filled with spinach, mushrooms, feta cheese, and drizzled with a roasted red pepper sauce.


Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1/3 cup crumbled feta cheese
  • 1 large roasted red bell pepper (jarred or freshly roasted)
  • 1 tablespoon olive oil
  • 1 small garlic clove
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and pierce each several times with a fork. Place on a baking sheet and bake for 45–50 minutes until soft. Remove and let cool slightly.
  2. While the potatoes bake, heat olive oil in a skillet over medium heat. Add chopped onion and garlic, sauté until translucent. Add mushrooms and cook until softened. Stir in fresh spinach and rosemary, cooking until wilted. Season with salt and pepper. Set aside.
  3. In a blender or food processor, combine roasted red pepper, olive oil, garlic, Greek yogurt, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if needed.
  4. Slice each sweet potato open and fluff the inside slightly with a fork. Fill with the spinach and mushroom mixture. Top with crumbled feta. Place back in the oven for 5–7 minutes to warm the filling and slightly melt the feta.
  5. Drizzle generously with roasted red pepper sauce and serve immediately.
