Description

Delicious and easy-to-make Sugar Cookie Bars topped with a creamy frosting, perfect for any occasion.


Ingredients

Scale
  • ¾ cup (1.5 sticks) unsalted butter, softened
  • 1 ⅔ cups granulated sugar
  • ¼ cup powdered sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • For the Frosting:
  • ½ cup (1 stick) unsalted butter, softened
  • 4 oz cream cheese, softened
  • 2 teaspoons pure vanilla extract
  • A pinch of salt
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13 baking dish with parchment paper or spray with non-stick spray then set aside.
  2. Cream the butter and granulated sugar together, then sift in the powdered sugar and beat again until light and fluffy.
  3. Add the egg, vanilla extract, and almond extract, and beat again until smooth.
  4. Sift the flour, baking powder, baking soda, and salt together in a separate bowl and whisk until well combined.
  5. Pour the flour mixture into the wet ingredients and beat until well combined. Then press dough together with your hands until it fully comes together.
  6. Press dough evenly into the prepared baking dish and bake for 15-20 minutes, or until the sides puff up and the top starts to crack.
  7. Remove from the oven and cool completely before icing. (You can speed up the cooling by popping the baked cookie into the fridge.)

Notes

  • For a fun twist, add colorful sprinkles to the frosting.
  • Store any leftover bars in an airtight container at room temperature for up to 5 days.
  • For richer flavor, let the bars sit overnight before serving.
