- ¾ cup (1.5 sticks) unsalted butter, softened
- 1 ⅔ cups granulated sugar
- ¼ cup powdered sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- ½ teaspoon almond extract
- 2 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- For the Frosting:
- ½ cup (1 stick) unsalted butter, softened
- 4 oz cream cheese, softened
- 2 teaspoons pure vanilla extract
- A pinch of salt
- 3 cups powdered sugar
Instructions
- Preheat the oven to 350°F and prepare a 9×13 baking dish with parchment paper or spray with non-stick spray then set aside.
- Cream the butter and granulated sugar together, then sift in the powdered sugar and beat again until light and fluffy.
- Add the egg, vanilla extract, and almond extract, and beat again until smooth.
- Sift the flour, baking powder, baking soda, and salt together in a separate bowl and whisk until well combined.
- Pour the flour mixture into the wet ingredients and beat until well combined. Then press dough together with your hands until it fully comes together.
- Press dough evenly into the prepared baking dish and bake for 15-20 minutes, or until the sides puff up and the top starts to crack.
- Remove from the oven and cool completely before icing. (You can speed up the cooling by popping the baked cookie into the fridge.)
Notes
- For a fun twist, add colorful sprinkles to the frosting.
- Store any leftover bars in an airtight container at room temperature for up to 5 days.
- For richer flavor, let the bars sit overnight before serving.
