- 1 (9 oz) package cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh basil, chopped
- 3 tbsp extra virgin olive oil (for the dressing)
- 1 tbsp fresh lemon juice (for the dressing)
- 1 tsp Dijon mustard (for the dressing)
- 1/2 tsp dried oregano (for the dressing)
- Salt and black pepper, to taste (for the dressing)
Instructions
- Cook the tortellini: Bring a pot of salted water to a boil. Cook the tortellini according to the package instructions, then drain and rinse under cold water to cool.
- Make the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper.
- Assemble the salad: In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, olives, feta, and basil.
- Dress & serve: Pour the dressing over the salad and toss well. Serve immediately or chill for 30 minutes to let the flavors meld.
Notes
- For best results, refrigerate the salad for 30 minutes before serving to enhance the flavors.
- This salad can be made a few hours in advance and stored in the refrigerator.
