Description

A refreshing salad perfect for summer, featuring cheese tortellini, fresh vegetables, and a tangy dressing.


Ingredients

  • 1 (9 oz) package cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh basil, chopped
  • 3 tbsp extra virgin olive oil (for the dressing)
  • 1 tbsp fresh lemon juice (for the dressing)
  • 1 tsp Dijon mustard (for the dressing)
  • 1/2 tsp dried oregano (for the dressing)
  • Salt and black pepper, to taste (for the dressing)

Instructions

  1. Cook the tortellini: Bring a pot of salted water to a boil. Cook the tortellini according to the package instructions, then drain and rinse under cold water to cool.
  2. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper.
  3. Assemble the salad: In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, olives, feta, and basil.
  4. Dress & serve: Pour the dressing over the salad and toss well. Serve immediately or chill for 30 minutes to let the flavors meld.
