Description

A delightful bite-sized appetizer featuring roasted sweet potatoes topped with creamy avocado and zesty lime.


Ingredients

  • Sweet Potatoes: 2 large, scrubbed and sliced into ¼-inch thick rounds
  • Olive Oil: 2 tablespoons
  • Salt and Pepper: To taste
  • Avocados: 2 ripe, mashed or sliced
  • Lime Juice: From 1 lime, freshly squeezed
  • Salt: To enhance flavor
  • Red Chili Flakes: Optional, for heat
  • Cilantro: Fresh, chopped, for garnish
  • Pomegranate Seeds: For garnish
  • Crumbled Feta: For garnish
  • Toasted Pumpkin Seeds: For garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Arrange sweet potato slices on a baking sheet lined with parchment paper. Brush both sides with olive oil and season with salt and pepper.
  3. Roast for 15–20 minutes, flipping halfway, until tender and slightly crisp on the edges.
  4. In a bowl, mash the avocados with lime juice, salt, and optional red chili flakes. Taste and adjust seasoning as needed.
  5. Allow roasted sweet potato rounds to cool slightly. Spread or layer the avocado mixture on top of each round.
  6. Garnish with cilantro, pomegranate seeds, crumbled feta, or pumpkin seeds as desired.
  7. Arrange the crostini on a platter. Serve immediately for the best texture and flavor.
