Ingredients
- Sweet Potatoes: 2 large, scrubbed and sliced into ¼-inch thick rounds
- Olive Oil: 2 tablespoons
- Salt and Pepper: To taste
- Avocados: 2 ripe, mashed or sliced
- Lime Juice: From 1 lime, freshly squeezed
- Salt: To enhance flavor
- Red Chili Flakes: Optional, for heat
- Cilantro: Fresh, chopped, for garnish
- Pomegranate Seeds: For garnish
- Crumbled Feta: For garnish
- Toasted Pumpkin Seeds: For garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Arrange sweet potato slices on a baking sheet lined with parchment paper. Brush both sides with olive oil and season with salt and pepper.
- Roast for 15–20 minutes, flipping halfway, until tender and slightly crisp on the edges.
- In a bowl, mash the avocados with lime juice, salt, and optional red chili flakes. Taste and adjust seasoning as needed.
- Allow roasted sweet potato rounds to cool slightly. Spread or layer the avocado mixture on top of each round.
- Garnish with cilantro, pomegranate seeds, crumbled feta, or pumpkin seeds as desired.
- Arrange the crostini on a platter. Serve immediately for the best texture and flavor.
