Description

A flavorful grilled chicken dish with a sweet and smoky glaze made from fresh mango and pineapple.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup diced fresh mango
  • 1 cup pineapple chunks (plus more for garnish)
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 2 tbsp honey
  • Juice of 1 lime
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • Fresh cilantro or mint for garnish

Instructions

  1. Make the marinade: Blend mango, pineapple, garlic, paprika, honey, lime juice, soy sauce, and olive oil until smooth.
  2. Marinate the chicken: Pour the marinade over chicken in a bag or dish. Refrigerate 30 minutes to 4 hours.
  3. Preheat grill: Heat to medium-high and oil the grates.
  4. Grill the chicken: Cook chicken for 6-7 minutes per side until internal temp reaches 165°F.
  5. Make glaze: Simmer reserved marinade (not used on raw chicken) until thickened.
  6. Glaze and finish: Brush glaze on chicken during the last few minutes of grilling.
  7. Serve: Plate with pineapple chunks and herbs. Enjoy!
