Sweet & Sour Vodka Rainbow Rollups are a fun and colorful treat made with fruity vodka gelatin and sour candy strips, perfect for parties or gatherings.

- 1 cup sour rainbow candy strips
- 1 cup vodka
- 2 cups fruit-flavored gelatin from packets
- 2 cups water
- 1/2 cup granulated sugar
- 1/2 cup corn syrup
- 1/2 cup sour sugar (optional, for coating)
Instructions
- Bring 2 cups of water to a rolling boil in a saucepan.
- Remove the pan from heat and add the gelatin packets, stirring until dissolved.
- Add the granulated sugar and corn syrup, stirring until fully incorporated.
- Let the mixture cool slightly.
- Pour in the vodka and stir well.
- Lightly grease a 9×13 inch pan (or two 8×8 inch pans).
- Pour the mixture into the prepared dish evenly.
- Refrigerate for 4 to 6 hours until set.
- Run a knife around the edges to loosen the gelatin.
- Turn the dish upside down onto a cutting board or parchment paper.
- Cut the gelatin into 1 inch wide strips.
- Cut the sour candy strips to match the length of the gelatin strips.
- Place a sour candy strip on top of a gelatin strip and roll tightly.
- Repeat until all strips are paired.
- Roll the finished rollups in sour sugar if desired.
- Store in the refrigerator until ready to serve.

- Use a sharp knife or pizza cutter for clean cuts.
