Texas Roadhouse Rattlesnake Bites are a deliciously spicy appetizer made with jalapeños stuffed with a creamy cheese mixture and deep-fried to perfection.

- 8 fresh jalapeños, halved and seeded
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Optional: cayenne pepper, to taste
Instructions
- Preheat oil in a deep frying pan over medium heat.
- In a mixing bowl, combine the cream cheese, cheddar cheese, and cayenne pepper (if using) until smooth.
- Generously stuff each jalapeño half with the cheese mixture.
- Set up a breading station: place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
- Dip each stuffed jalapeño first in flour, then egg wash, and finally coat with panko breadcrumbs.
- Fry the coated jalapeños in hot oil for about 3-4 minutes on each side or until golden brown. Drain on paper towels before serving.
Notes
- Adjust cayenne pepper to your preferred spice level.
- For an extra crispy coating, double-dip in egg and breadcrumbs.
