- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tsp fish sauce
Instructions
- Mix ground chicken, breadcrumbs, and egg in a bowl until combined.
- Form the mixture into meatballs.
- Brown the meatballs in a skillet over medium heat.
- In a separate pot, simmer coconut milk, curry paste, and fish sauce.
- Add the browned meatballs to the pot and simmer for 10 minutes, or until cooked through.
Notes
- Adjust the amount of red curry paste to taste for more or less spice.
