Instructions
- Brew a strong espresso and allow it to cool completely before use.
- Combine mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract in a large mixing bowl.
- Stir the mixture just until combined, then refrigerate for at least 1 hour to firm up.
- Using a small cookie scoop or spoon, portion the chilled mixture into small balls and arrange them on a parchment-lined baking sheet.
- Melt dark chocolate in a heatproof bowl. Dip each truffle into the melted chocolate, ensuring complete coverage, and let the excess drip off before returning to the baking sheet.
- Refrigerate truffles for about 30 minutes to allow the chocolate coating to set, then dust generously with cocoa powder before serving.
