Description
A refreshing summer beverage combining a mix of berries and lemon.
Ingredients
Scale
- 4 cups of water divided
- 1 cup sugar
- 1 cup fresh squeezed lemon juice
- 1 tablespoon finely grated lemon peel
- 1 ½ cups frozen thawed, triple berry blend, or 2 cups fresh berries
Instructions
- If using frozen, thawed berries, place them in a strainer over a bowl and thaw. Be sure to capture the juice from the berries as they thaw.
- In a large pot, bring 2 cups of water and sugar to a boil. Boil for 2 minutes, stirring occasionally. Remove from the heat. Stir in the lemon juice and lemon peel; cool.
- In a blender, combine 1 cup of cooled lemon mixture and the thawed triple berry blend, or fresh berries, if using fresh; cover and process until well blended. Strain and discard the seeds.
- Pour the triple berry mixture, juice from the thawed berries and remaining water into the pot with the remaining lemon mixture. Stir well.
- Pour into a pitcher. Refrigerate until chilled. Serve on ice.
Notes
- Adjust the sweetness by adding more or less sugar as per your taste.
- Fresh herbs like mint can be added for an additional flavor twist.
