Description

Tropical Chia Pudding is a refreshing, healthy dessert that combines creamy coconut milk with chia seeds and topped with fresh tropical fruits and granola.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup full-fat coconut milk
  • 2 tbsp honey or maple syrup
  • 1 cup fresh diced fruits (mango, pineapple, kiwi)
  • 1/4 cup granola

Instructions

  1. In a bowl, whisk together chia seeds and coconut milk until well combined. Let sit for 10 minutes to thicken.
  2. Stir in honey or maple syrup to sweeten the chia mixture.
  3. Layer diced tropical fruits at the bottom of serving glasses.
  4. Spoon chia mixture over the fruit layers and top with additional fruit for garnish.
  5. Finish with a sprinkle of granola for crunch, then serve immediately or refrigerate for later.

Notes

  • For a vegan option, use maple syrup instead of honey.
  • Feel free to customize the fruit toppings based on what is in season.
