Ingredients

- 4 cups cubed seedless watermelon (about 1 small melon)
- 3/4 cup crumbled feta cheese (or cubed block feta)
- 1/4 cup fresh mint leaves, torn or chopped
- 1–2 tablespoons olive oil
- 1 tablespoon fresh lime or lemon juice
- Salt and black pepper, to taste
- 1/4 cup thinly sliced red onion (optional)
- 1/2 cup arugula or baby spinach (optional)
- Balsamic glaze, for drizzling (optional)
- Chopped cucumber (optional)
- Toasted pine nuts or pumpkin seeds (optional)
- Fresh basil leaves (optional)
Instructions
- Cut watermelon into bite-sized cubes, removing any seeds if necessary. Place in a large mixing bowl.
- Sprinkle crumbled feta and chopped mint over the watermelon.
- In a small bowl, whisk together olive oil, lime or lemon juice, salt, and black pepper.
- Drizzle the dressing over the salad and toss gently to combine, being careful not to break up the watermelon or feta.
- Serve immediately, or chill for 15 to 30 minutes to allow the flavors to meld.
- Just before serving, drizzle with balsamic glaze or garnish with additional mint if desired.
Notes
- For added crunch, consider including chopped cucumber or toasted seeds.
- Chilling the salad enhances the flavor.
