Ingredients

  • 3/4 cup crumbled feta cheese (or cubed block feta)
  • 1/4 cup fresh mint leaves, torn or chopped
  • 12 tablespoons olive oil
  • 1 tablespoon fresh lime or lemon juice
  • Salt and black pepper, to taste
  • 1/4 cup thinly sliced red onion (optional)
  • 1/2 cup arugula or baby spinach (optional)
  • Balsamic glaze, for drizzling (optional)
  • Chopped cucumber (optional)
  • Toasted pine nuts or pumpkin seeds (optional)
  • Fresh basil leaves (optional)

Instructions

  1. Cut watermelon into bite-sized cubes, removing any seeds if necessary. Place in a large mixing bowl.
  2. Sprinkle crumbled feta and chopped mint over the watermelon.
  3. In a small bowl, whisk together olive oil, lime or lemon juice, salt, and black pepper.
  4. Drizzle the dressing over the salad and toss gently to combine, being careful not to break up the watermelon or feta.
  5. Serve immediately, or chill for 15 to 30 minutes to allow the flavors to meld.
  6. Just before serving, drizzle with balsamic glaze or garnish with additional mint if desired.
