A fun and delicious treat, Watermelon Popping Boba are small spheres filled with fresh watermelon juice that pop in your mouth, perfect for adding to drinks and desserts.

- 1 cup fresh watermelon juice strained
- 1–2 tablespoons sugar or agave syrup to taste
- 1/2 teaspoon sodium alginate
- 1 drop red or pink food coloring (optional)
- 2 cups cold water
- 1 teaspoon calcium lactate or calcium chloride
Instructions
- Grab your blender. Pour in that lovely strained watermelon juice. Add your sugar or agave syrup, and sprinkle in the sodium alginate. Blend everything together until it’s super smooth. Let this mixture sit for about 15 to 30 minutes.
- While your watermelon mixture is resting, prepare the calcium bath. In a separate bowl, pour in 2 cups of cold water. Add the calcium lactate or calcium chloride and stir well until completely dissolved.
- Grab a squeeze bottle or a dropper. Carefully fill it with your watermelon-alginate mixture. Drip the mixture into the calcium bath, one drop at a time from a little height to form spheres.
- Let the pearls hang out in the calcium bath for about 30 to 60 seconds to develop a jelly-like outer skin.
- Using a fine-mesh strainer, gently scoop out the boba pearls from the calcium bath and transfer them to a bowl filled with clean, cold water to rinse off excess calcium solution.
- Serve the watermelon popping boba immediately in your favorite drinks or desserts.
