A refreshing salad combining quinoa, watermelon, and vegetables with a zesty dressing.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 2 cups seedless watermelon, diced
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely diced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh mint, chopped
- 1/4 cup pistachios or almonds, chopped (optional, for crunch)
- 2 tbsp fresh lime juice
- 2 tbsp extra virgin olive oil
- 1 tsp honey (or maple syrup for a vegan option)
- Salt and black pepper, to taste
Instructions
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat, cover, and simmer for about 12-15 minutes, until the quinoa is fluffy and the water is absorbed. Remove from heat, fluff with a fork, and let cool.
- In a small bowl, whisk together lime juice, olive oil, honey, salt, and black pepper.
- In a large bowl, combine the cooked quinoa, diced watermelon, cucumber, red onion, feta, mint, and nuts (if using).
- Drizzle the dressing over the salad and toss gently. Serve immediately or let it chill in the fridge for 15 minutes to enhance the flavors.
Notes
- For a vegan option, use maple syrup instead of honey.
- Chill the salad for 15 minutes before serving to enhance the flavors.
