Description

A refreshing salad combining quinoa, watermelon, and vegetables with a zesty dressing.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 cups seedless watermelon, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh mint, chopped
  • 1/4 cup pistachios or almonds, chopped (optional, for crunch)
  • 2 tbsp fresh lime juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey (or maple syrup for a vegan option)
  • Salt and black pepper, to taste

Instructions

  1. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat, cover, and simmer for about 12-15 minutes, until the quinoa is fluffy and the water is absorbed. Remove from heat, fluff with a fork, and let cool.
  2. In a small bowl, whisk together lime juice, olive oil, honey, salt, and black pepper.
  3. In a large bowl, combine the cooked quinoa, diced watermelon, cucumber, red onion, feta, mint, and nuts (if using).
  4. Drizzle the dressing over the salad and toss gently. Serve immediately or let it chill in the fridge for 15 minutes to enhance the flavors.
