Description

A delightful and refreshing cocktail that combines the tropical flavors of coconut with the refreshing taste of mint, perfect for the holiday season.


Ingredients

  • 2 ounces coconut milk
  • 1 ounce coconut rum
  • 1 ounce white rum
  • 1 ounce lime juice
  • 1 tablespoon sugar
  • Sparkling water to top
  • 4 mint leaves plus more for garnish
  • Pomegranate arils for garnish

Instructions

  1. In a shaker or mixing glass, muddle the mint leaves with the sugar and lime juice until the sugar dissolves and the mint is aromatic.
  2. If you prefer a smoother cocktail, strain out the muddled mint leaves before proceeding.
  3. Add the white rum, coconut rum, and coconut milk to the shaker, stirring or shaking gently to combine.
  4. Fill a glass halfway with ice, then pour in the coconut rum mixture until the glass is about three-quarters full.
  5. Top with sparkling water for a light, bubbly finish.
  6. Garnish with extra mint leaves and a sprinkle of pomegranate arils for a festive look.
