Description

A delightful pizza topped with winter greens and pomegranate, perfect for a cozy meal.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 1/2 cups chopped collard greens
  • Salt and pepper to taste
  • 1 package store bought pizza dough
  • 1/3 cup jarred basil pesto
  • 1/3 cup sliced red onion
  • 1/4 cup pomegranate arils
  • 1 (8 oz) mozzarella ball, sliced
  • 1 1/4 cups shredded mozzarella

Instructions

  1. Preheat to 400°F. Line baking sheet with silpat or foil with cooking spray.
  2. Roll dough into rectangle, place on sheet. Bake for 7 minutes.
  3. Sauté collard greens with oil, salt and pepper until slightly golden, about 2-3 minutes.
  4. Spread pesto on crust leaving a border. Top with greens, onions, pomegranate, and both mozzarellas.
  5. Cook for 15 minutes until crust and cheese are golden brown.

Notes

  • Feel free to substitute other winter greens if collard greens are not available.
  • For a vegan option, use vegan cheese and pesto.
