Description

Delicious Apple Pie Doughnuts filled with warm apple pie filling and rolled in cinnamon sugar.


Ingredients

  • 2 packages (1/4 ounce each) active dry yeast
  • 1 cup warm apple cider (110° to 115° F)
  • 6 tablespoons unsalted butter, melted until browned
  • 1/3 cup granulated sugar
  • 1 large egg plus 1 egg yolk, at room temperature
  • 2 Tablespoons whole milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 3 and 3/4 cups all-purpose flour, divided
  • 3 cups frying oil (refined coconut oil, canola or vegetable oil)
  • 5 large apples, peeled, cored, and diced
  • 3 and 1/2 tablespoons unsalted butter (for filling)
  • 1/4 teaspoon salt (for filling)
  • 1/4 cup white sugar (for filling)
  • 1/3 cup light brown sugar, packed (for filling)
  • 2 teaspoons ground cinnamon (for filling)
  • 2 and 1/2 tablespoons apple cider (for filling)
  • 1/2 tablespoon all-purpose flour (for filling)
  • 1 cup granulated sugar (for coating)
  • 1 Tablespoon cinnamon (for coating)

Instructions

  1. Combine the yeast and warm cider in a small bowl; set aside until foamy, about 5 minutes.
  2. In a stand mixer bowl, combine melted butter and sugar, mix well. Whisk in egg, egg yolk, milk, salt, nutmeg, cinnamon, yeast mixture, and 3 cups flour, beat until smooth. Add remaining flour until a soft ball of dough forms around the hook.
  3. Transfer dough to a greased bowl, cover, and let rise in a warm area until tripled in size, about 1 hour.
  4. Punch the dough down, turn it out onto a floured surface, and knead lightly.
  5. Roll the dough into a large rectangle about 1/2 inch thick and cut out circles with a dough cutter.
  6. Place cut doughnuts on a greased baking sheet, cover, and let rise for 45 minutes to 1 hour.
  7. Heat oil in a large pot to 360°F. Fry doughnuts for 1-2 minutes on each side until golden brown.
  8. Roll warm doughnuts in cinnamon sugar and set aside.
  9. For apple pie filling, melt butter in a skillet, add apples, salt, and sugars; cook until softened. Stir in cinnamon, apple cider, and flour, then cook until thickened.
  10. Fill each doughnut with apple pie filling using a pastry bag.
