Baked Cheesy Stuffed Zucchini Boats are a delicious and healthy dish filled with ground beef, cheese, and spices, baked to perfection.

- 4 medium zucchini
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1/2 cup onion chopped
- 2 clove garlic minced
- 1/2 cup bread crumbs
- 1/4 cup Parmesan cheese grated
- 1 cup mozzarella cheese shredded
- 1/4 cup tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon parsley chopped
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Slice each zucchini in half lengthwise and scoop out the flesh to create boats.
- Chop the reserved zucchini flesh finely and set aside.
- Heat olive oil in a skillet over medium heat and sauté onion and garlic until fragrant.
- Add ground beef to the skillet and cook until browned, breaking it up with a spoon.
- Stir in chopped zucchini flesh, bread crumbs, Parmesan cheese, tomato sauce, dried oregano, salt and black pepper until combined.
- Spoon the meat mixture evenly into each zucchini boat.
- Sprinkle shredded mozzarella cheese on top of each stuffed zucchini.
- Bake in the preheated oven for 20 to 25 minutes or until the zucchini is tender and the cheese is melted and golden.
- Garnish with chopped parsley before serving.
Notes
- Feel free to add your favorite vegetables to the filling.
- You can substitute ground beef with ground turkey or chicken for a lighter version.
