Description

A delicious dish featuring balsamic glazed chicken served over orzo pasta, accompanied by whipped feta, roasted strawberries, and fresh basil.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 4 cups water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 cup feta cheese, crumbled
  • 2 tbsp cream cheese
  • 1 tbsp olive oil
  • 2 cups strawberries, halved
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 tsp salt
  • Fresh basil leaves (for garnish)
  • Extra cracked black pepper (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Toss strawberries with balsamic vinegar, honey, and salt. Spread on a baking sheet and roast for 15–18 minutes until softened and lightly caramelized.
  2. Blend feta, cream cheese, and olive oil until smooth and creamy. Refrigerate until ready to serve.
  3. Cook orzo in salted boiling water until tender. Drain and toss with olive oil. Keep warm.
  4. Season chicken with kosher salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear chicken until golden on both sides and cooked through. Remove from the pan.
  5. Add balsamic vinegar, honey, and garlic to the skillet. Simmer until reduced and glossy. Return chicken to the pan and coat thoroughly in the glaze.
  6. Spread whipped feta onto a serving platter or individual plates. Spoon the warm orzo alongside.
  7. Arrange balsamic glazed chicken over the orzo and top with roasted strawberries.
  8. Finish with fresh basil leaves and cracked black pepper. Serve immediately.

Notes

  • This recipe can be made ahead by preparing the whipped feta and roasted strawberries in advance.
  • Serve with a side salad for a complete meal.
  • Adjust the sweetness of the glaze by modifying the amount of honey.
