- 8 large banana peppers
- 1 pound ground beef
- 1 cup cooked white rice
- 1 small yellow onion, finely diced

- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese

- 1 teaspoon Italian seasoning
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Cut the 8 banana peppers lengthwise and remove the seeds so each pepper opens like a small boat.
- Cook the beef with onion and garlic until the meat changes from pink to browned and crumbly.
- Add the cooked rice and Italian seasoning, salt, and black pepper to the browned beef.
- Spoon the beef and rice mixture into the 8 pepper halves, allowing some filling to spill over the edges.
- Pour tomato sauce around and lightly over the filled peppers and scatter mozzarella across the tops.
- Bake until the peppers soften and the cheese melts into uneven creamy patches.
- Transfer one serving to a white plate and add a little parsley over the melted cheese.
