Hearty Beef and Macaroni Casserole

- 1 pound ground beef
- 1 cup elbow macaroni
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup beef broth
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and black pepper. Bring the mixture to a simmer.
- Add the elbow macaroni to the skillet, stirring to combine. Cover and cook for about 10 minutes, or until the macaroni is tender, stirring occasionally.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For added flavor, consider using ground beef with a higher fat content.
- Feel free to add additional vegetables like bell peppers or mushrooms for extra nutrition.
- Leftovers can be stored in the refrigerator for up to 3 days.
