Description

A delicious Berry Custard Strudel with a crispy pastry filled with mixed berries and creamy custard.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten
  • 1 tbsp coarse sugar
  • 1 cup strawberries, diced
  • 1 cup blueberries
  • 1/2 cup raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 1/2 cups whole milk
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • Powdered sugar, for garnish (optional)
  • Fresh berries, for garnish (optional)
  • Mint leaves, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine strawberries, blueberries, raspberries, sugar, cornstarch, and lemon juice in a bowl. Set aside.
  3. Heat milk in a saucepan until steaming but not boiling.
  4. Whisk egg yolks, sugar, and cornstarch in a separate bowl until smooth.
  5. Slowly whisk warm milk into the egg mixture.
  6. Return mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
  7. Remove from heat and stir in vanilla extract and butter. Let cool slightly.
  8. Roll out puff pastry on a parchment-lined baking sheet.
  9. Spread vanilla custard down the center of the pastry.
  10. Spoon berry mixture evenly over the custard.
  11. Fold pastry edges over filling and seal.
  12. Brush with beaten egg and sprinkle with coarse sugar.
  13. Bake for 25 to 30 minutes until golden brown and crisp.
  14. Cool for 10 minutes before slicing.
  15. Garnish with powdered sugar, fresh berries, and mint leaves before serving.

  • Feel free to substitute other berries based on availability and preference.
  • For a richer flavor, use heavy cream instead of whole milk in the custard.
