- 1 tablespoon lime juice
- 1 teaspoon apple cider vinegar
- ½ teaspoon chili flakes
- ¼ teaspoon smoked paprika
- Pinch of salt
- Optional: 1 teaspoon hot honey for extra shine and heat
Instructions
- Make the cheese base: In a bowl, mix softened cream cheese, cheddar, ranch seasoning, garlic powder, smoked paprika, black pepper, lime zest, lime juice, and cilantro until smooth and fully combined.
- Shape the log: Place the cheese mixture onto a sheet of plastic wrap. Shape it into a thick log, then wrap tightly. Chill for at least 1 hour so it firms up.
- Make the blackberry jalapeño cowboy caviar relish: In a bowl, combine blackberry jam, diced jalapeño, corn, red onion, cheddar, cilantro, lime juice, apple cider vinegar, chili flakes, smoked paprika, salt, and hot honey if using. Stir gently until glossy and chunky.
- Roll the cheese log: Unwrap the chilled cheese log. Spoon the blackberry cowboy caviar relish over the outside and gently press it onto the log so it sticks. Let some glossy mixture drip slightly for a dramatic look.
