- 2 cups Old Fashioned Rolled Oats
- 1 1/2 cups Vanilla Yogurt
- 2 cups Almond/Soy Milk
- 4 tsp Cinnamon
- 1 cup Blueberries
- 1/4 cup Water
- 1 tbsp Cornstarch
- 1/4 cup Sugar
- 1 tbsp Lemon Juice
Instructions
- Combine oats, yogurt, almond milk, and cinnamon. Mix well. Divide equally between 5 containers.
- In a sauce pan, make the blueberry sauce by combining the blueberries, water, cornstarch, and sugar. Stir to combine.
- Continue stirring over medium heat until sauce starts to form. Reduce the heat to low and keep stirring frequently for a minute or two until a thick sauce forms.
- Remove from heat and stir in lemon juice.
- Once the sauce cools, distribute evenly between the containers. Seal and keep refrigerated.
Notes
- For a vegan option, use plant-based yogurt.
- Can be stored in the refrigerator for up to 5 days.
- Adjust the sweetness by adding more or less sugar to your taste.
