Description

A delicious and nutritious recipe for Blueberry Pie Overnight Oats that combines flavorful ingredients for a perfect breakfast option.


Ingredients

  • 2 cups Old Fashioned Rolled Oats
  • 1 1/2 cups Vanilla Yogurt
  • 2 cups Almond/Soy Milk
  • 4 tsp Cinnamon
  • 1 cup Blueberries
  • 1/4 cup Water
  • 1 tbsp Cornstarch
  • 1/4 cup Sugar
  • 1 tbsp Lemon Juice

Instructions

  1. Combine oats, yogurt, almond milk, and cinnamon. Mix well. Divide equally between 5 containers.
  2. In a sauce pan, make the blueberry sauce by combining the blueberries, water, cornstarch, and sugar. Stir to combine.
  3. Continue stirring over medium heat until sauce starts to form. Reduce the heat to low and keep stirring frequently for a minute or two until a thick sauce forms.
  4. Remove from heat and stir in lemon juice.
  5. Once the sauce cools, distribute evenly between the containers. Seal and keep refrigerated.

Notes

  • For a vegan option, use plant-based yogurt.
  • Can be stored in the refrigerator for up to 5 days.
