  • 12 slices bacon, thin or regular cut
  • ½ cup (100 g) packed brown sugar
  • 2 tablespoons honey (optional)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon smoked paprika (optional)
  • Toothpicks for securing bacon wraps

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a medium bowl, combine ½ cup packed brown sugar, 2 tablespoons honey (if using), ½ teaspoon black pepper, ¼ teaspoon garlic powder, and ¼ teaspoon smoked paprika. Stir well to mix all the spices evenly.
  3. Add 1 pound of little smokies to the bowl and gently toss until they are evenly coated with the brown sugar mixture.
  4. Cut the 12 slices of bacon in half (or thirds for smaller bites). Wrap one piece of bacon around each little smokie and secure with a toothpick, ensuring the bacon slightly overlaps to keep it in place.
  5. Place the wrapped little smokies on the prepared baking sheet, spacing them about ½-inch apart.
  6. Bake for 25-30 minutes, turning the little smokies halfway through cooking, until the bacon is crispy and the brown sugar caramelized. Watch carefully to avoid burning the sugar.
  7. Remove from oven and let cool for a few minutes before serving to allow the glaze to harden slightly.
