Description

Cheese Zucchini Rollatini is a delicious and easy-to-make dish featuring thinly sliced zucchini rolled around a creamy ricotta filling and baked in marinara sauce.

Ingredients

Scale
  • 34 medium to large zucchinis (or enough for 30 pieces of zucchini noodles)
  • 1 1/2 cups tomato sauce/marinara
  • 1 cup ricotta cheese
  • 1 cup Parmigiano Reggiano, finely grated and freshly grated – divided
  • 2/3 cup mozzarella cheese
  • 1 egg
  • 3 Tablespoons fresh basil, chopped
  • 2 Tablespoons fresh parsley, chopped
  • 23 large garlic cloves, minced
  • 1/4 teaspoon (each) salt & black pepper
  • Plus more salt for the zucchini noodles

Instructions

  1. Preheat oven to 425F.
  2. Slice zucchini: First remove stems from zucchinis and carefully use a mandoline to slice into 1/8 inch thin pieces (lengthwise).
  3. Salt and quick-bake zucchini: Lay zucchini noodles flat on a baking tray and dust with salt. Let them sweat for about 5 minutes, then bake for 1 minute to soften.
  4. Remove from oven and thoroughly pat dry with a paper towel.
  5. Mix ricotta filling ingredients: In a bowl, stir together ricotta, 1/2 cup Parmigiano Reggiano, chopped basil, chopped parsley, minced garlic, egg, and salt & black pepper.
  6. Prepare the baking dish: Spread 1/2 cup (or more if needed) of tomato sauce in a large baking dish.
  7. Fill and roll-up zucchini: Overlap two zucchini slices, spread 1 Tablespoon of ricotta filling over zucchini noodles, then gently roll up.
  8. Place the fold of the rollatini on the bottom and arrange in baking dish with tomato sauce.
  9. Repeat until noodles and ricotta filling are used up.
  10. Add sauce & cheese: Spoon 1-2 Tablespoons of tomato sauce over top of each rollatini. Add mozzarella and 1/2 cup parmesan cheese on top.
  11. Bake uncovered for 25-30 minutes until cheese is browned and zucchini is cooked. Serve with fresh basil and enjoy!

Notes

  • Ensure zucchini slices are cut uniformly for even cooking.
  • Adjust cooking time based on thickness of zucchini slices.
