Ingredients

- 1 lb ground beef
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 lb frozen hashbrowns
- 1 can Rotel (diced tomatoes with green chilies)
- 1 can cheddar cheese soup
- 1/2 cup sour cream
- 1 packet taco seasoning
- 2 cups shredded Colby Jack cheese
- 2 cups lightly crushed Doritos
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef and drain the grease. Season with onion powder, garlic powder, cumin, salt, and pepper.
- In a 9×13-inch casserole dish, combine the cooked meat, frozen hashbrowns, cheddar cheese soup, Rotel, sour cream, and taco seasoning. Mix well.
- Bake uncovered for 30 minutes.
- Remove from oven, top with shredded Colby Jack cheese and crushed Doritos.
- Return to oven and bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Serve and enjoy!

- This casserole can be prepared ahead of time and stored in the refrigerator before baking.
- Feel free to customize with additional toppings such as diced jalapeños or green onions.
- For a vegetarian option, substitute ground beef with plant-based meat.
