Description

Chicken & Dumpling Casserole is a comforting and easy-to-make dish featuring tender chicken and fluffy dumplings.


Ingredients

Scale
  • 34 cups chopped cooked chicken, preferably rotisserie
  • 2 cups chicken broth
  • ¼ cup unsalted butter
  • 1 cup all-purpose flour
  • 1¼ tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup

Instructions

  1. Preheat oven to 400ºF.
  2. Melt butter in the microwave and pour into the bottom of a 9×13 pan. Shred the chicken and spread it on top of the butter.
  3. Whisk together the milk and the flour, baking powder and salt. Slowly pour over the chicken. Don’t stir.
  4. Whisk together chicken broth and cream of chicken soup. Pour soup over the flour and milk mixture. Don’t stir.
  5. Bake uncovered for 35 to 45 minutes, or until dumplings are golden brown.

Notes

  • For a twist, add vegetables such as peas or carrots.
  • This recipe can be made ahead and stored in the refrigerator before baking.
  • Make sure to use unsalted cream of chicken soup to control the sodium levels.
