Description
A quick and delicious Chicken and Green Bean Stir Fry dish that is perfect for a weeknight meal.
Ingredients

- 1 pound boneless chicken breast, diced into bite-sized pieces
- 1 tablespoon cornstarch (to coat the chicken)
- 1 teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- 4 tablespoons canola or vegetable oil, divided
- 12 ounces fresh green beans, washed and trimmed
- 1 medium yellow onion, thinly sliced
- ½ cup sweet chili sauce
- ¼ cup low sodium soy sauce
- 1 tablespoon light brown sugar
- 2 teaspoons cornstarch (for the stir fry sauce)
- 1 teaspoon rice vinegar
- 1 teaspoon garlic powder
- ½ teaspoon ground ginger, or more to taste
- ½ teaspoon red pepper flakes, optional and to taste
- Sesame seeds, for garnishing, optional and to taste
Instructions
- In a large bowl, coat the chicken pieces with cornstarch, salt, and pepper.
- Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat, add the chicken, and cook for about 5-6 minutes until cooked through, stirring frequently.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the green beans and onion with additional oil if needed, sauté for 3-5 minutes until softened.
- In a small bowl, whisk together the sweet chili sauce, soy sauce, brown sugar, cornstarch, rice vinegar, garlic powder, ground ginger, and red pepper flakes.
- Add the cooked chicken back to the skillet with vegetables, pour the stir fry sauce over, stir to combine and simmer for 3-4 minutes until sauce thickens.
- Garnish with sesame seeds and serve immediately, preferably with rice.
Notes
- Extra stir fry can be stored in the fridge for up to 4-5 days.
- Do not freeze as the texture of the green beans will be affected.
- Reheat leftovers in the microwave for about 30 seconds.
