Chicken and Green Bean Stir Fry

Description

A quick and delicious Chicken and Green Bean Stir Fry dish that is perfect for a weeknight meal.


Ingredients

  • 1 pound boneless chicken breast, diced into bite-sized pieces
  • 1 tablespoon cornstarch (to coat the chicken)
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • 4 tablespoons canola or vegetable oil, divided
  • 12 ounces fresh green beans, washed and trimmed
  • 1 medium yellow onion, thinly sliced
  • ½ cup sweet chili sauce
  • ¼ cup low sodium soy sauce
  • 1 tablespoon light brown sugar
  • 2 teaspoons cornstarch (for the stir fry sauce)
  • 1 teaspoon rice vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger, or more to taste
  • ½ teaspoon red pepper flakes, optional and to taste
  • Sesame seeds, for garnishing, optional and to taste

Instructions

  1. In a large bowl, coat the chicken pieces with cornstarch, salt, and pepper.
  2. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat, add the chicken, and cook for about 5-6 minutes until cooked through, stirring frequently.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the green beans and onion with additional oil if needed, sauté for 3-5 minutes until softened.
  5. In a small bowl, whisk together the sweet chili sauce, soy sauce, brown sugar, cornstarch, rice vinegar, garlic powder, ground ginger, and red pepper flakes.
  6. Add the cooked chicken back to the skillet with vegetables, pour the stir fry sauce over, stir to combine and simmer for 3-4 minutes until sauce thickens.
  7. Garnish with sesame seeds and serve immediately, preferably with rice.

Notes

  • Extra stir fry can be stored in the fridge for up to 4-5 days.
  • Do not freeze as the texture of the green beans will be affected.
  • Reheat leftovers in the microwave for about 30 seconds.
