- ½ cup breadcrumbs (Italian seasoned preferred)
- ¼ cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, finely minced
- 2 tablespoons fresh parsley, finely minced
- 1 teaspoon onion powder
- 1 teaspoon salt (or to taste)
- ½ teaspoon freshly ground black pepper (or to taste)
- 2 tablespoons olive oil (for sautéing)
- 2 tablespoons olive oil (for sauce)
- 2 tablespoons unsalted butter
- 2 cloves garlic, finely minced (to taste)
- 1 cup chicken broth
- ⅓ cup dry white wine (or more broth)
- ¼ cup freshly squeezed lemon juice
- 2 tablespoons capers, drained
- ½ teaspoon salt (to taste)
- ¼ teaspoon freshly ground black pepper (to taste)
- Fresh parsley, finely minced (for garnishing, optional)
Instructions
- In a large bowl, combine all the meatball ingredients and mix lightly; do not overmix.
- Form meatballs using a 2-tablespoon scoop and roll them for a smooth finish.
- Heat olive oil in a large skillet and cook meatballs over medium-high heat for 6-8 minutes until golden.
- Remove cooked meatballs and set aside.
- In the same skillet, add oil, butter, and garlic; cook until garlic is fragrant.
- Pour in chicken broth, wine (or additional broth), lemon juice, capers, salt, and pepper; simmer for 3-4 minutes.
- Add meatballs back into the skillet and simmer for 2-3 minutes until warmed through.
- Adjust sauce flavors as needed before serving.
- Garnish with fresh parsley if desired and serve immediately.
Notes
- Do not overcrowd the skillet when cooking meatballs.
- For added flavor, leave the browned bits in the skillet while making the sauce.
- Adjust seasoning based on preference, especially salt and pepper levels.
