Description

Chicken Piccata Meatballs are flavorful and juicy chicken meatballs served in a zesty lemon butter sauce with capers, perfect for dinner.


Ingredients

  • 1 pound ground chicken (or ground turkey)
  • ½ cup breadcrumbs (Italian seasoned preferred)
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon freshly ground black pepper (or to taste)
  • 2 tablespoons olive oil (for sautéing)
  • 2 tablespoons olive oil (for sauce)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, finely minced (to taste)
  • 1 cup chicken broth
  • ⅓ cup dry white wine (or more broth)
  • ¼ cup freshly squeezed lemon juice
  • 2 tablespoons capers, drained
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon freshly ground black pepper (to taste)
  • Fresh parsley, finely minced (for garnishing, optional)

Instructions

  1. In a large bowl, combine all the meatball ingredients and mix lightly; do not overmix.
  2. Form meatballs using a 2-tablespoon scoop and roll them for a smooth finish.
  3. Heat olive oil in a large skillet and cook meatballs over medium-high heat for 6-8 minutes until golden.
  4. Remove cooked meatballs and set aside.
  5. In the same skillet, add oil, butter, and garlic; cook until garlic is fragrant.
  6. Pour in chicken broth, wine (or additional broth), lemon juice, capers, salt, and pepper; simmer for 3-4 minutes.
  7. Add meatballs back into the skillet and simmer for 2-3 minutes until warmed through.
  8. Adjust sauce flavors as needed before serving.
  9. Garnish with fresh parsley if desired and serve immediately.

Notes

  • Do not overcrowd the skillet when cooking meatballs.
  • For added flavor, leave the browned bits in the skillet while making the sauce.
  • Adjust seasoning based on preference, especially salt and pepper levels.
