Description

A delicious and easy recipe for Chicken and Potato Foil Packets cooked in the oven.


Ingredients

Scale
  • 12 boneless skinless chicken breasts (cubed)
  • 2 small red potatoes (scrubbed and sliced)
  • 1 small onion (sliced)
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons Italian seasoning (divided)
  • salt and black pepper (to taste)
  • 2 sheets of 12 inch aluminum foil

Instructions

  1. Preheat oven to 400º Fahrenheit or preheat grill on medium high.
  2. In a bowl, toss chicken breast with 1 teaspoon of Italian seasoning.
  3. Lay out one piece of aluminum foil. Spray the foil with cooking spray. Place chicken on the center and arrange vegetables on the side of the chicken. Drizzle olive oil over vegetables and sprinkle on remaining Italian seasoning.
  4. Line the remaining aluminum foil over the food and close the ends together by rolling it together 2-3 times.
  5. Poke a hole into a corner and bake or grill for 25-30 minutes, or until potatoes are tender and chicken is cooked through. Season with salt and pepper to taste.

Notes

  • You can add other vegetables such as bell peppers or carrots for more flavor.
  • Make sure to seal the foil packets tightly to avoid leaks.
