Description

Cinnamon Donut Loaf is a delightful sweet treat that combines the flavors of cinnamon and nutmeg for a deliciously moist loaf that’s perfect for breakfast or dessert.

Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup (100g) granulated sugar
  • 1 large egg (room temperature)
  • ½ cup (120ml) whole milk (room temperature)
  • ¼ cup (60ml) vegetable oil (or melted unsalted butter)
  • 1 teaspoon pure vanilla extract
  • ¼ cup (60g) unsalted butter, melted (for coating)
  • ½ cup (100g) granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan, optionally lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, ground cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the sugar, egg, milk, oil (or melted butter), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 35 to 45 minutes until a toothpick comes out clean.
  6. Allow the loaf to cool in the pan for 10 minutes, then remove and cool on a wire rack for an additional 10 minutes.
  7. Brush the loaf with melted butter and roll in a mixture of granulated sugar and cinnamon until fully coated.

Notes

  • Ensure ingredients are at room temperature for best results.
  • Overmixing can lead to a dense loaf, so mix gently.
  • For a thicker crust, apply an additional layer of cinnamon sugar after brushing with melted butter.
