Description

Cinnamon Sugar Candied Cashews are an irresistibly sweet and crunchy snack, perfect for satisfying your sweet tooth.


Ingredients

  • 1 egg white, whisked to very frothy
  • 1 tablespoon water
  • 3 cups cashews (or substitute with almonds, pecans, walnuts, peanuts, or a combination)
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 to 2 teaspoons cinnamon, or to taste
  • 1 teaspoon Kosher salt, or to taste
  • ½ teaspoon cayenne pepper, optional and to taste

Instructions

  1. Preheat oven to 300F. Line a baking sheet with a Silpat or parchment paper.
  2. In a large bowl, add the egg white and water, whisk vigorously until frothy.
  3. Add the cashews and stir to coat them evenly.
  4. Add the granulated sugar, light brown sugar, cinnamon, salt, and optional cayenne, stir to coat evenly.
  5. Spread the nuts in an even layer on the prepared baking sheet.
  6. Bake for 25 to 30 minutes, checking to prevent burning. The coating will appear bubbly and soupy, but will harden as it cools.
  7. Allow the nuts to cool on the baking tray for at least 30 minutes.
  8. Once cool, break apart any large clusters and transfer to airtight containers or jars.

Notes

  • Coating will firm up dramatically as the nuts cool.
  • For extra crispiness, allow the nuts to cool overnight.
  • Adjust the level of cayenne pepper based on your heat preference.
