Cinnamon Sugar Candied Cashews are an irresistibly sweet and crunchy snack, perfect for satisfying your sweet tooth.
Ingredients

- 1 egg white, whisked to very frothy
- 1 tablespoon water
- 3 cups cashews (or substitute with almonds, pecans, walnuts, peanuts, or a combination)
- ½ cup granulated sugar
- ¼ cup light brown sugar, packed
- 1 to 2 teaspoons cinnamon, or to taste
- 1 teaspoon Kosher salt, or to taste
- ½ teaspoon cayenne pepper, optional and to taste
Instructions
- Preheat oven to 300F. Line a baking sheet with a Silpat or parchment paper.
- In a large bowl, add the egg white and water, whisk vigorously until frothy.
- Add the cashews and stir to coat them evenly.
- Add the granulated sugar, light brown sugar, cinnamon, salt, and optional cayenne, stir to coat evenly.
- Spread the nuts in an even layer on the prepared baking sheet.
- Bake for 25 to 30 minutes, checking to prevent burning. The coating will appear bubbly and soupy, but will harden as it cools.
- Allow the nuts to cool on the baking tray for at least 30 minutes.
- Once cool, break apart any large clusters and transfer to airtight containers or jars.
Notes
- Coating will firm up dramatically as the nuts cool.
- For extra crispiness, allow the nuts to cool overnight.
- Adjust the level of cayenne pepper based on your heat preference.
