Ingredients
Scale
- 1 cup all-purpose flour
- 1 ½ Tablespoons baking powder
- ¾ teaspoon salt
- 1 cup cream style sweet corn
- 1 large egg
- 2 Tablespoons honey
- 1 Tablespoon butter, melted (can use salted or unsalted)
- ½ cup frozen corn, thawed
- oil for frying
Instructions
- Pour about 4 inches of oil into a Dutch oven or a large pot. Bring the temperature up to 325°F.
- In a large bowl, stir together the flour, baking powder, and salt.
- In a separate bowl, whisk together the sweet corn, egg, honey, and melted butter.
- Add the wet mixture to the dry ingredients and stir until there are no dry patches.
- Stir in the thawed corn.
- Carefully drop Tablespoon portions of the batter into the hot oil, working in small batches (5-6 fritters at a time).
- Fry the fritters, stirring occasionally, until they are evenly browned, about 3-4 minutes.
- Place the cooked fritters on a paper-towel-lined plate to absorb excess oil and then transfer to a wire rack over a sheet tray to keep them crispy.
- Keep the fritters warm in a 200°F oven while frying the remaining batch.
- Serve immediately.
Notes
- Ensure the oil temperature is stable to prevent burning.
- Use a cookie scoop for uniform fritters.
