A deliciously unique treat combining the rich flavors of cottage cheese and smoked salmon in a homemade bagel.

- 1 cup cottage cheese
- 1 large egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon honey
- 4 ounces smoked salmon, sliced
- 3.5 ounces cream cheese, softened
- 1/2 small red onion, thinly sliced
- 1 tablespoon capers, drained
- 1 small cucumber, thinly sliced
- Fresh dill for garnish
- Freshly ground black pepper
Instructions
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine cottage cheese and egg. Whisk until smooth and well incorporated.
- Add flour, baking powder, salt, and honey to the wet mixture. Stir until a shaggy dough forms.
- Turn dough onto a lightly floured surface and knead gently for 1 to 2 minutes until just combined and slightly tacky.
- Divide dough into 4 equal pieces. Roll each piece into a ball, poke a hole in the center, and shape into a bagel form.
- Place shaped bagels on the prepared baking sheet.
- Bake for 20 to 25 minutes until golden brown and cooked through. Transfer to a wire rack to cool completely.
- Once cooled, slice bagels horizontally. Toast lightly if desired.
- Spread softened cream cheese on each bagel half. Layer with smoked salmon, cucumber slices, red onion, and capers.
- Garnish with fresh dill and cracked black pepper. Serve immediately.
Notes
- For a lower carb version, you can substitute the all-purpose flour with almond flour.
- Feel free to add other toppings like avocado or tomatoes based on your preferences.
