Description

Delicious bite-sized treats made with broccoli, cottage cheese, and cheddar that melt in your mouth.


Ingredients

Scale
  • 2 cups broccoli florets, finely chopped
  • 1 cup cottage cheese
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup mozzarella cheese, cut into small cubes
  • 1/2 cup sharp cheddar cheese, shredded (for topping)
  • 2 tbsp Parmesan cheese, grated
  • Chopped chives, optional
  • Cracked black pepper, optional

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin.
  2. Steam broccoli for 3 to 4 minutes until just tender. Finely chop and let cool slightly.
  3. In a large bowl, combine broccoli, cottage cheese, cheddar cheese, eggs, garlic powder, onion powder, salt, and black pepper.
  4. Fill each muffin cup halfway with the broccoli mixture.
  5. Press a mozzarella cube into the center of each portion.
  6. Cover with the remaining broccoli mixture and smooth the tops.
  7. Sprinkle cheddar cheese and Parmesan evenly over each bite.
  8. Bake for 18 to 22 minutes until deeply golden and bubbling around the edges.
  9. Allow the bites to rest for 5 minutes before removing from the pan.
  10. Garnish with chopped chives and cracked black pepper if desired, then serve warm.

  • These melt bites are great for meal prep and can be frozen for later use.
