Delicious bite-sized treats made with broccoli, cottage cheese, and cheddar that melt in your mouth.
Ingredients

- 2 cups broccoli florets, finely chopped
- 1 cup cottage cheese
- 1 1/2 cups sharp cheddar cheese, shredded
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup mozzarella cheese, cut into small cubes
- 1/2 cup sharp cheddar cheese, shredded (for topping)
- 2 tbsp Parmesan cheese, grated
- Chopped chives, optional
- Cracked black pepper, optional
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin.
- Steam broccoli for 3 to 4 minutes until just tender. Finely chop and let cool slightly.
- In a large bowl, combine broccoli, cottage cheese, cheddar cheese, eggs, garlic powder, onion powder, salt, and black pepper.
- Fill each muffin cup halfway with the broccoli mixture.
- Press a mozzarella cube into the center of each portion.
- Cover with the remaining broccoli mixture and smooth the tops.
- Sprinkle cheddar cheese and Parmesan evenly over each bite.
- Bake for 18 to 22 minutes until deeply golden and bubbling around the edges.
- Allow the bites to rest for 5 minutes before removing from the pan.
- Garnish with chopped chives and cracked black pepper if desired, then serve warm.
Notes
- These melt bites are great for meal prep and can be frozen for later use.
- Feel free to substitute different cheeses based on your preference.
