Description
A refreshing and colorful salad combining tortellini with a variety of fresh vegetables and a zesty vinaigrette, reminiscent of cowboy caviar.
Ingredients

- 1 package (20 to 24 ounces) refrigerated cheese tortellini
- 1 can (15 ounces) black beans, drained, rinsed
- 1 can (15 ounces) corn kernels, drained (or 1 ½ cups fresh or frozen corn)
- 1 cup cherry tomatoes, halved
- 1 orange bell pepper, diced
- 1 yellow bell pepper, diced
- ½ medium red onion, finely diced
- 1 medium jalapeño, seeded, finely diced (adjust to taste)
- ⅓ cup fresh cilantro, chopped
- 1 to 1 ½ cups Italian vinaigrette, plus more to taste
- Salt and black pepper to taste
Instructions
- Cook the tortellini according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.
- In a very large bowl, combine the cooled tortellini, black beans, corn, cherry tomatoes, bell peppers, red onion, jalapeño, and cilantro.
- Pour 1 cup of Italian vinaigrette over the salad and toss gently until everything is evenly coated. Add more dressing if desired.
- Taste and season with salt and black pepper as needed.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to come together. Stir gently before serving.
Notes
- For a spicier salad, leave some of the seeds in the jalapeño.
- This salad can be made a day in advance for even better flavor.
