Description

A delightful and nutritious dish featuring sweet potatoes filled with taco-flavored turkey and topped with cottage cheese, avocado, and fresh vegetables.


Ingredients

  • 24 medium sweet potatoes, scrubbed
  • 1 lb lean ground turkey or chicken
  • 1 cup cottage cheese, any fat level
  • 1 small avocado, sliced
  • 1 small tomato, diced
  • 2 green onions, sliced
  • 12 tbsp olive oil
  • 12 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Poke each sweet potato a few times with a fork, rub with a little olive oil and salt, and bake 40–50 minutes until soft all the way through.
  2. While they bake, heat 1 tbsp olive oil in a pan over medium heat. Add ground turkey, break it up, and cook until browned and no longer pink, about 7–10 minutes.
  3. Stir in chili powder, garlic powder, smoked paprika, salt, and pepper. Let cook 2–3 more minutes so the spices flavor the meat.
  4. Let baked sweet potatoes cool a few minutes. Slice each one down the middle and gently press the ends to open a “boat.” Fluff the orange flesh with a fork.
  5. Spoon hot turkey into each potato. Add a big spoon of cottage cheese on top, then tuck in avocado slices. Finish with tomato and green onion. Serve warm and eat with a spoon.
