- 2 boneless skinless chicken breasts thinly sliced into cutlets
- 1 ½ tablespoons olive oil
- Cajun seasoning to taste
- Onion powder to taste
- Garlic powder to taste
- Paprika to taste
- Black pepper to taste
- 4 tablespoons butter
- 1 cup Parmesan cheese freshly grated
- 1 ½ cups heavy whipping cream
- Cooked white rice enough for 4 servings
Instructions
- Cook white rice according to package instructions. Set aside and keep warm.
- Season chicken cutlets on both sides with Cajun seasoning, onion powder, garlic powder, paprika, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 3–4 minutes per side until cooked through. Remove from skillet and let rest.
- Wipe out excess oil, add butter to the skillet, and melt over medium heat.
- Pour in heavy whipping cream, stirring to combine. Add seasoning, then gradually stir in Parmesan cheese until the sauce is smooth. Simmer for 1 minute.
- Fluff rice and divide among plates. Slice chicken into strips, place over rice, and spoon Cajun cream sauce on top, keeping layers separate. Serve immediately.
Notes
- For a milder flavor, adjust the amount of Cajun seasoning.
- Ensure chicken reaches an internal temperature of 165°F (74°C).
- Freshly grated Parmesan works best for smoothing out the sauce.
