A delicious and easy-to-make creamy Mexican street corn cup that brings the flavors of authentic Mexican street corn to your home.

- 4 cups corn kernels
- 3 tablespoons butter
- 3 tablespoons mayonnaise
- 1/2 cup Mexican crema or sour cream
- 1 to 2 tablespoons lime juice
- 1 to 2 teaspoons chili powder, plus more for topping
- Salt, to taste
- 2 tablespoons fresh coriander or cilantro, chopped
- Optional: crumbled cotija cheese for topping
Instructions
- Melt the butter in a skillet over medium heat.
- Add the corn kernels and cook for 4 to 6 minutes, stirring occasionally, until hot and lightly roasted.
- Transfer the corn to a bowl while still warm.
- Add the mayonnaise, Mexican crema or sour cream, and lime juice. Mix well until the corn is evenly coated.
- Add chili powder, salt, and chopped coriander or cilantro. Stir again.
- Taste and adjust with more lime juice, salt, or chili powder if needed.
- Spoon into serving cups.
- Top with extra chili powder and more chopped coriander or cilantro, if desired.
- Optional street-corn style upgrade: top with 1/3 cup crumbled cotija cheese, a little hot sauce or Tajín, and a pinch of garlic powder.
Notes
- Feel free to adjust the spice level by adding more or less chili powder.
- For a vegetarian option, omit the cotija cheese or use a vegan cheese alternative.
- Can be served warm or at room temperature.
